Southern salilota (lat. Salilota Australis) is a demersal, deep-sea fish that lives at a depth of 200 – 1000 m, in subtropical waters in the southeastern part of the Pacific Ocean and in the southwestern part of the Atlantic Ocean. It belongs to the cod family. In appearance, this fish resembles pike and cod. Its color is gray-pink, its back is almost brown, its fins are dark, its tail fin has rounded ends. Southern salillota grows up to 50 cm, females are usually larger than males.
The taste of southern salilotta is reminiscent of cod and hake. The flesh is white, relatively firm and almost boneless, making it easy to prepare in a variety of ways. Dishes made from this fish are characteristic of South American cuisine – hearty, nutritious and very tasty. Very tasty salillote, baked in the oven with sour cream or in foil with herbs.
